Potato Kugel (Kosher)

  1. Heat 2 tablespoons of the oil in medium skillet.
  2. Add onion; cook and stir until tender.
  3. Set aside.
  4. Place 1/3 of potatoes in food processor container; cover.
  5. Pulse to finely chop.
  6. Add 1 egg; process just until blended.
  7. Place in colander.
  8. Sprinkle with 1/4 cup matzo meal; drain.
  9. Repeat with remaining potatoes, eggs and matzo meal.
  10. Mix potato mixture, onions, salt and pepper in large bowl.
  11. Spoon into greased 13x9-inch baking dish.
  12. Brush top with remaining 2 tablespoons oil.
  13. Bake at 350F for 1 hour or until top is browned and edges are crisp.
  14. Cool 10 minutes before cutting into squares.
