Potato Kugel (Kosher)
- 1/4 cup peanut oil, divided
- 1 medium onion, chopped
- 3 lb. red potatoes, peeled, quartered King Sooper's 5 lb For $1.88 thru 02/09
- 3 eggs
- 3/4 cup matzo meal
- 1 Tbsp. salt
- 1/2 tsp. pepper
- Heat 2 tablespoons of the oil in medium skillet.
- Add onion; cook and stir until tender.
- Set aside.
- Place 1/3 of potatoes in food processor container; cover.
- Pulse to finely chop.
- Add 1 egg; process just until blended.
- Place in colander.
- Sprinkle with 1/4 cup matzo meal; drain.
- Repeat with remaining potatoes, eggs and matzo meal.
- Mix potato mixture, onions, salt and pepper in large bowl.
- Spoon into greased 13x9-inch baking dish.
- Brush top with remaining 2 tablespoons oil.
- Bake at 350F for 1 hour or until top is browned and edges are crisp.
- Cool 10 minutes before cutting into squares.
