German Potato Salad

  2. Boil potatoes in water till almost fork tender.
  3. Meanwhile, dice sausage, onion and dill pickles and place in a large enough bowl to mix well.

  5. Drain potatoes and allow to cool for few minutes before peeling.
  6. 3.
  7. While potatoes are cooling, combine the vinegar and sugar in a shaker to blend well allowing sugar to dissolve.
  8. 4.
  9. Gently peel skins away from the potatoes.
  10. Once you have them all peeled, you may then start to slice them into the bowl with the sausage, onion and pickles.
  11. Do not slice too thinly or they will fall apart.
  12. 5.
  13. Once all potatoes are sliced, add sprinkle of salt and dash of pepper along with parsley then pour vinegar/sugar mix over everything.
  14. Fold lightly with a very large spoon to blend flavours.
  15. 6.
  16. Add mayo to salad mix and fold carefully making sure that all the mayo coats everything well.
  17. 7.
  18. Cover and place in fridge till one hour before serving -- and enjoy!
