Pecan-Parmesan Fish Fillets
- 1 cup long-grain brown rice, uncooked
- 1 can (10 fl oz/298 mL) 25%-less-sodium chicken broth
- 1-1/4 cups water
- 1 cup small broccoli florets
- 1/2 cup pecan halves, toasted, chopped
- 1/3 cup Kraft 100% Parmesan Light Grated Cheese
- 1/4 cup chopped fresh parsley
- 3 Tbsp. lemon juice, divided Safeway 4 ct For $5.00 thru 02/09
- 1 Tbsp. olive oil
- 4 tilapia fillets (1 lb./450 g) Walmart Supercenter 1 pkg For $10.98 thru 02/14
- Heat oven to 375 degrees F.
- Cook rice as directed on package, using broth and water, omitting salt and adding broccoli to the boiling water for the last 10 min.
- Meanwhile, combine nuts, cheese, parsley, 2 Tbsp.
- lemon juice and oil.
- Place fish in single layer in shallow baking dish; spread with nut mixture.
- Drizzle with remaining lemon juice.
- Bake 10 to 12 min.
- or until fish flakes easily with fork.
- Serve with rice.
