Shrimp-Stuffed Arepas

  1. Blend water and corn in blender until smooth; pour into large bowl.
  2. Add masa harina and milk; stir until mixture forms soft dough.
  3. Divide into 6 portions; flatten each to 5-inch round.
  4. Cook on large griddle on medium-high heat 12 min.
  5. or until both sides are golden brown, turning occasionally.
  6. Heat oil in large skillet on medium heat.
  7. Add peppers and garlic; cook and stir 1 min.
  8. Stir in shrimp; cook and stir 2 to 3 min.
  9. or until shrimp turn pink.
  10. Add tomatoes, cilantro and lime juice; mix lightly.
  11. Remove from heat.
  12. Split arepas; fill with cheese, shrimp mixture and avocados.
