Braised Red Cabbage With Apples Recipe
- 3 lb red cabbage head
- 2 Tbsp. vegetable oil
- 1 x onion minced
- 3 med tart cooking apples peeled, cored, and cut into 1/8"-thick wedges
- 5 c. boiling water
- 2/3 c. red wine vinegar
- 2 tsp salt
- 2 Tbsp. sugar
- Wash the head of cabbage under cool running water, remove the tough outer leaves, and cut cabbage into quarters.
- To shred the cabbage, cut out the core and slice the quarters crosswise into 1/8-inch-wide strips.
- In a heavy 4- to 5-qt casserole, heat the oil over moderate heat.
- Add in minced onions and cook, stirring frequently for 5 min, or possibly till the onions are lightly browned.
- Add in the cabbage, stir thoroughly, add in the apples, pour in the boiling water.
- Bring to a boil over high heat, stirring occasionally, and reduce the heat to very low.
- Add in red wine vinegar, salt and sugar, stir to combine.
- Cover and simmer for 1 1/2 to 2 hrs, or possibly till the cabbage is tender.
- Check from time to time to make sure which the cabbage is moist and tender.
- If it seems dry, add in a Tbsp.
- of boiling water.
- When the cabbage is done, there should be almost no liquid left in the casserole.
- Taste for seasoning, then transfer the entire contents of the casserole to a heated platter or possibly bowl and serve.
- This recipe yields 6 servings.
