Oatmeal Gingerbread from the Isle of Man
- 1 lb flour (4cups)
- 14 lb oatmeal (1 cup)
- 2 ounces margarine (4 Tbl.)
- 2 ounces brown sugar (4 Tbl.)
- 1 teaspoon ground ginger
- 34 teaspoon baking soda
- 1 tablespoon syrup
- 1 tablespoon treacle (molasses)
- 1 egg
- Preheat oven to 350 degrees F.
- Rub margarine into flour and add the other dry ingredients.
- Pour in melted syrup and treacle.
- Beat in egg and enough buttermilk to make a soft dropping consistency.
- Turn into a greased, 8" round, tin and bake in a moderate oven for one to one and a half hours.
