Mango Teacakes

  1. Preheat oven to 400 degrees F.
  2. In a large mixing bowl, cream butter and sugar together with an electric mixer.
  3. Add the mango puree, lemon zest, extracts and egg and mix well.
  4. In a medium mixing bowl, sift the flour, baking soda, and baking powder.
  5. Carefully fold in the dry ingredients and buttermilk into the wet mixture with a rubber spatula.
  6. Drop spoonfuls of the dough onto parchment-lined cookie sheet.
  7. Bake for 12 to 15 minutes or until golden brown.
  8. Transfer to a wire rack to cool.
  9. Sprinkle with powdered sugar.
