Red Beans And Rice(New Orleans Style)

  1. Rinse beans well and drain.
  2. Place beans in large pot, cover with water.
  3. Add ham bone, bring to boil.
  4. Reduce heat and simmer 40 minutes.
  5. Add sausage and cook covered over low heat for 1 hour, stirring occasionally.
  6. Add garlic, onion, celery, peppers, scallions and bay leaf.
