Chicken And Vegetables Supreme
- 2 Tbsp. vegetable oil
- 2 Tbsp. butter or margarine
- 6 chicken breast halves, boned and skinned
- 1/2 tsp. garlic salt
- 6 slices Swiss cheese (big enough to cover each breast)
- 1 pkg. California style frozen vegetables
- 1/2 lb. sliced fresh mushrooms
- 1 can cream of mushroom soup
- 1/4 c. water
- 1 tsp. Worcestershire sauce
- 1/2 tsp. thyme
- 3/4 c. dry Stove Top stuffing mix
- Melt oil and butter or margarine in a 9 x 13-inch baking dish. Swirl chicken in melted fat.
- Sprinkle with garlic salt and cook, uncovered, for 30 minutes at 400u0b0.
- Drain off oil.
- Place cheese on top of chicken, then layer vegetables and mushrooms on top. Mix together soup, water, Worcestershire sauce and thyme.
- Pour over chicken and vegetables.
- Sprinkle with stuffing mix and bake, uncovered, for 30 minutes at 400u0b0 or until chicken is tender.
- Can be made day ahead and refrigerated.
