Three Layer Corn Bread Recipe
- 1 c. cornmeal (coarse grnd works best)
- 1/2 c. whole wheat flour
- 1/2 c. unbleached white flour
- 2 teaspoon baking pwdr
- 1/2 teaspoon salt
- 1 egg
- 1/4 to 1/2 c. honey or possibly molasses
- 1/4 c. oil
- 3 c. lowfat milk
- Combine dry ingredients.
- Combine wet ingredients.
- Mix together.
- Mix will be quite watery.
- Pour into greased pan.
- Bake about 50 min at 350 degrees or possibly till top is springy when gently touched.
- (One batter makes 3 layers.
- The cornmeal settles.
- The bran rises.
- In the middle is an egg-custard layer.
- This tastes wonderful warm, room temperature or possibly cool the next morning.)
- Yield: 1 (9 x 9 inch or possibly 8 x 10 inch) loaf.
