Breasts Of Chicken Bonne Maman Recipe
- 4 boneless, skinless chicken breasts, about 1 1/2 lbs.
- Salt to taste
- Freshly grnd pepper to taste
- 26 sm. white onions
- 3 tbsp. extra virgin olive oil
- 1/2 pound mushrooms, sliced and quartered (whole if small)
- 8 basil leaves
- 1/3 c. dry white wine
- 1 tbsp. butter
- Cut each piece of breast in half crosswise.
- Sprinkle with salt and pepper.
- Peel the onions and put in saucepan.
- Add in cool water to cover and salt to taste.
- Bring to a boil and cook about 2 min.
- Drain.
- Heat oil in large skillet and add in chicken.
- Cook approximately 30 seconds; add in onions.
- Cook 10 min and turn breasts.
- Scatter mushrooms throughout - 3 more min.
- Add in basil, wine and butter.
- Cook and cover about 3 min.
- Remove basil and garnish each breast with the basil leaves.
- Serve with onions and mushrooms in sauce spooned over.
