Breakfast Burritos With Tomato Basil Topping Recipe
- 2 tsp margarine
- 1 x potato peeled, grated
- 1/4 c. minced peeled onion
- 1 c. egg substitute
- 1/8 tsp freshly-grnd black pepper
- 4 x flour tortillas - (8" dia) warmed
- 1/3 c. shredded Cheddar cheese
- 1 lrg tomato diced
- 1/2 tsp crushed dry basil
- In large nonstick skillet over medium heat, heat margarine and saute/fry potato and onion till tender.
- Pour in egg, sprinkle with pepper.
- Cook, stirring occasionally till mix is set.
- Divide egg mix proportionately between tortillas; top with cheese.
- Fold tortillas over egg mix.
- Top with tomato mixed with basil.
- This recipe yields 4 servings.
