Eastern Stuffed Potatoes Recipe

  1. Preheat oven to 450 degrees.
  2. Pierce potatoes several times and bake 50-55 min.
  3. Remove from oven and keep hot.
  4. Filling: Place grnd beef on rack in small baking pan.
  5. Place in oven with potatoes and bake 5 min.
  6. Spray large skillet with Pam.
  7. Add in onion, cook 1-2 min.
  8. Set aside.
  9. In small pan stir cornstarch and 2 pounds of yogurt till smooth.
  10. Whisk in remaining yogurt and garlic.
  11. Cook over low heat 3 min, whisking constantly.
  12. Remove from heat.
  13. Halve potatoes lengthwise, scoop out pulp.
  14. Add in to meat mix along with 2 lb.
  15. yogurt mix, parsley and cinnamon.
  16. Fill potato shells; spoon yogurt mix on top of beef.
  17. Bake 10-12 min.
