Eastern Stuffed Potatoes Recipe
- 4 (5 ounce.) baking potatoes, scrubbed
- 10 ounce. lean grnd meat
- 1/2 c. minced onion
- 2 teaspoon cornstarch
- 3/4 c. plain nonfat yogurt
- 2 garlic cloves, mashed
- 1/4 c. chopped parsley
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- Preheat oven to 450 degrees.
- Pierce potatoes several times and bake 50-55 min.
- Remove from oven and keep hot.
- Filling: Place grnd beef on rack in small baking pan.
- Place in oven with potatoes and bake 5 min.
- Spray large skillet with Pam.
- Add in onion, cook 1-2 min.
- Set aside.
- In small pan stir cornstarch and 2 pounds of yogurt till smooth.
- Whisk in remaining yogurt and garlic.
- Cook over low heat 3 min, whisking constantly.
- Remove from heat.
- Halve potatoes lengthwise, scoop out pulp.
- Add in to meat mix along with 2 lb.
- yogurt mix, parsley and cinnamon.
- Fill potato shells; spoon yogurt mix on top of beef.
- Bake 10-12 min.
