Cornmeal-Fruit Pudding
- 2 cups apple juice
- 1 Tbs. honey, optional
- 1 tsp. vanilla extract
- 1/2 cup quick-cooking grits
- 8 oz. mixture dried fruit, coarsely chopped
- 6 oz. soy yogurt
- 1/2 cup chopped pecans or walnuts
- Bring apple juice to a boil in large saucepan.
- Add honey, if desired, and stir in vanilla extract.
- Stir in grits gently, reduce heat to low, cover and cook, stirring occasionally, until grits start to thicken.
- Stir in chopped fruit.
- Remove from heat, and allow grits to firm.
- Spoon into dessert bowls, top with yogurt and garnish with nuts.
