Turkey Curry

  1. In stove top pan with cover, melt margarine over medium heat. Add onion, celery and apple; saute until tender but not browned. Sprinkle flour and spices over top and cook, stirring, for 2 minutes.
  2. Then stir in broth (use chicken if you don't have turkey) and bring to a boil, stirring constantly.
  3. Cook until thickened. Add turkey and heat thoroughly.
  4. Do not boil.
  5. Stir in raisins and serve immediately over hot rice.
  6. Use curry condiments such as coconut, chopped peanuts and chutney.
  7. Absolutely the best way to use remains from roast turkey.
