Turkey Curry
- 1 Tbsp. margarine
- 1 medium onion, finely chopped
- 1 c. chopped celery
- 1 tart apple, chopped
- 1 Tbsp. curry powder
- 2 Tbsp. flour
- 1/8 tsp. cumin
- 1/4 tsp. ginger
- 2 c. turkey broth
- 3 c. cut up turkey
- 1/2 c. golden raisins
- In stove top pan with cover, melt margarine over medium heat. Add onion, celery and apple; saute until tender but not browned. Sprinkle flour and spices over top and cook, stirring, for 2 minutes.
- Then stir in broth (use chicken if you don't have turkey) and bring to a boil, stirring constantly.
- Cook until thickened. Add turkey and heat thoroughly.
- Do not boil.
- Stir in raisins and serve immediately over hot rice.
- Use curry condiments such as coconut, chopped peanuts and chutney.
- Absolutely the best way to use remains from roast turkey.
