Salmon Potato Boats
- 2 large baking potatoes, baked,halved lengthwise
- 1 (7 ounce) can salmon, drained and flaked
- 1 package herb and lemon soup mix, prepared
- Scoop out potato halves, leaving 1/4 inch shell; reserve shells.
- Mash removed potato, add salmon and 1/2 c.
- of the prepered sauce; mix well.
- Spoon filling back into shells.
- Place in a shallow baking dish.
- Bake at 325 degrees for 15 minutes or until lightly browned.
- Reheat remaining sauce and serve over potatoes.
