Meat-Miso for Dan Dan Noodles
- 200 grams Ground meat (any meat)
- 1 tbsp Finely chopped garlic
- 1 tbsp Ginger, finely chopped
- 1/2 stalk Japanese leek (or onion), finely chopped
- 1 tbsp Doubanjiang
- 2 tbsp Sake (or Shaoxing wine)
- 2 tbsp Soy sauce
- 1 tbsp Hatcho miso (or tianmianjiang)
- 3 tbsp Sesame paste (or zhimajiang)
- 2 tbsp Vegetable oil
- 1 dash Salt and pepper
- Heat vegetable oil in a pan, and stir fry the finely chopped garlic and ginger.
- Add the finely chopped leek (or onion) and stir fry.
- Add the ground meat, and stir fry until cooked through.
- Add the doubanjiang, and stir fry well to bring out the spiciness.
- Add the sake, miso, sesame paste and soy sauce, and adjust the seasoning with salt and pepper.
