Meat-Miso for Dan Dan Noodles

  1. Heat vegetable oil in a pan, and stir fry the finely chopped garlic and ginger.
  2. Add the finely chopped leek (or onion) and stir fry.
  3. Add the ground meat, and stir fry until cooked through.
  4. Add the doubanjiang, and stir fry well to bring out the spiciness.
  5. Add the sake, miso, sesame paste and soy sauce, and adjust the seasoning with salt and pepper.
