Old Fashioned Gingerbread
- 2 1/2 c. sifted all-purpose flour
- 1 tsp. baking soda
- 1 1/2 tsp. ginger
- 1 tsp. cinnamon
- 1/2 tsp. nutmeg or mace
- 1 c. butter or margarine, softened
- 1 c. sugar
- 3 eggs
- 1 c. molasses
- 3/4 c. hot water
- sweetened whipped cream
- Preheat oven to 375u0b0.
- Grease well and flour 13 x 9 x 2-inch pan.
- Sift flour, baking soda, spices and salt together and set aside.
- Beat butter, sugar and eggs until smooth and fluffy in large bowl of electric mixer at high speed.
- Beat in molasses and hot water at low speed.
- Add flour mixture, beating until smooth. Pour batter into pan and cook 35 to 40 minutes or until cake tester inserted in center comes out clean.
- Cool and serve with whipped cream or plain.
