Calabazas y Camotes al Horno

  1. Preheat oven to 400F.
  2. Spray 2 large baking sheets with nonstick cooking spray.
  3. Combine squash and sweet potatoes or yams in large mixing bowl.
  4. Stir in oil, oregano, thyme, chile powder and salt.
  5. Place vegetables in equal portions on baking sheets, and spread out in one layer.
  6. Bake for 40 minutes.
  7. Stir vegetables, rotate pan positions in oven and bake 15 minutes more.
  8. Remove from oven, and serve on top of scoop of Mole Poblano.
