Steamed Red Snapper
- 1 1/2 pounds red snapper fillets
- 1 medium onions sliced into rings
- 1 tablespoon butter or margarine
- 1/2 cup tomato sauce
- 1 x ketchup
- 1 x basil sweet
- 1 x black pepper
- Rinse fish and drain on paper towel.
- In large skillet, saute onion in butter until just translucent.
- Lay fish fillets on top of onion rings.
- Top each fillet with tomato sauce.
- Sprinkle sweet basil and pepper to taste.
- Cover and simmer 10 to 15 minutes, until fish flakes.
- Serve with steamed new potatoes and vegetables.
