Wild Rice Pilaf

  1. Stir rices into boiling water & add salt.
  2. Simmer covered for 40 minutes.
  3. Heat margarine in a large skillet & saute onions & celery until golden.
  4. Add apple & saute for 5 minutes.
  5. Stir in cooked rices with juice, scallions, currants & spices.
  6. Season to taste with pepper.
  7. Saute mixture for 5 minutes, stirring.
  8. Just before serving, heat through, add more liquid if necessary & stir in parsley & nuts.
