Christmas Cake

  1. Cream butter and sugar; add eggs, beating well after each addition.
  2. Add jam, walnuts, cherries, raisins, potatoes, coconut and allspice.
  3. Stir in buttermilk.
  4. Add brandy.
  5. Add sifted flour with soda and salt and fold into the batter until smooth.
  6. Bake in two or three layers or in a tube pan in a 250u0b0 oven (slow) for about 1 1/2 hours or until done.
  7. Use any preferred icing with nuts.
