Christmas Cake
- 1 c. butter
- 2 c. sugar
- 3 whole eggs
- 1 c. blackberry jam
- 1 c. chopped nuts
- 1 c. glazed cherries
- 1 c. chopped raisins
- 1 c. mashed potatoes
- 1 1/2 c. shredded coconut
- 1 tsp. allspice
- 3/4 c. buttermilk
- 2 oz. brandy or brandy flavoring
- 1 1/2 c. sifted all-purpose flour
- 1 1/2 c. sifted cake flour
- 1 tsp. soda
- a little salt
- Cream butter and sugar; add eggs, beating well after each addition.
- Add jam, walnuts, cherries, raisins, potatoes, coconut and allspice.
- Stir in buttermilk.
- Add brandy.
- Add sifted flour with soda and salt and fold into the batter until smooth.
- Bake in two or three layers or in a tube pan in a 250u0b0 oven (slow) for about 1 1/2 hours or until done.
- Use any preferred icing with nuts.
