Tomato, Basil & Garlic Pasta
- 3 Tablespoons Olive Oil
- 1/2 whole Red Onion, Finely Chopped
- 1 Tablespoon Minced Garlic In Oil
- 1 teaspoon Red Chili Flakes
- 1 Tablespoon Ground Thyme
- 1 Tablespoon Oregano
- 12 ounces, weight Grape Tomatoes
- 1 teaspoon Sugar
- 1 pound Angel Hair Pasta
- 1/4 cups Grated Parmesan
- 1/4 cups Fresh Basil, Chiffonade
- Heat a large saute pan over medium high heat.
- Add the olive oil and warm it.
- When the oil is hot, add the onions and garlic and saute for 2 minutes.
- Add the spices and herbs and saute until the garlic begins to turn golden brown.
- Add the tomatoes and the sugar and stir well.
- Lower the heat and cook slowly letting the flavors merge while you make the pasta.
- Cook the pasta according to package instructions for al dente.
- Drain the pasta and add it into the sauce.
- Add the Parmesan and basil and toss well.
- Enjoy!
