Orange Glazed Sweet Potatoes
- 6 north carolina sweet potatoes, peeled and cut into large cubes
- 14 cup brown sugar
- 2 tablespoons butter
- 2 tablespoons orange juice
- 2 tablespoons orange zest
- 1 cup apricot preserves
- 12 teaspoon salt
- 1 teaspoon pepper
- 12 cup walnuts, chopped
- Place sweet potatoes in a 2-quart casserole dish, cover, and cook in microwave on high for 10-12 minutes, until potatoes are tender.
- Remove and set aside to cool slightly.
- Combine butter, brown sugar, orange juice, orange zest, apricot preserves, salt and pepper in a small microwave bowl and cook on high for 3 minutes, stirring each minute.
- Add orange mixture to the potatoes and toss lightly.
- Microwave until heated through.
- Baste with sauce twice during final heating.
- Garnish with the walnuts sprinkled on top.
