Santa Fe Chicken and Rice
- 1 bag Success Jasmine Rice, Success White Rice or Success Brown Rice
- non-stick cooking spray
- 1 lb. seasoned chicken breast, cut into strips
- 1 can (11 oz.) Mexican-style corn, drained
- 1 cup mild salsa
- 1 can (15 oz.) black beans
- 1/2 cup jalapeno Monterey Jack cheese, shredded
- Prepare rice according to package directions.
- While rice is cooking, heat skillet and spray with non-stick cooking spray.
- Add chicken and cook until chicken is no longer pink.
- Stir in corn, salsa, beans, and cooked rice.
- Sprinkle with cheese.
- Heat until cheese is melted.
