Light Orange Cheesecake

  1. Sprinkle gelatin over 1/2 cup orange juice in container of electric blender.
  2. Heat remaining 1 cup orange juice to boiling and add to blender.
  3. Cover and process at high speed until gelatin dissolves.
  4. Stop blender, add orange rind, 1/2 cup sugar, salt, egg yolks, cottage cheese and vanilla.
  5. Cover and process until smooth.
  6. Pour into a large bowl; chill until mixture mounds slightly when dropped from a spoon.
  7. Beat egg whites until soft peaks form, gradually beat in remaining 1/4 cup sugar and beat until stiff.
  8. Fold into orange mixture.
  9. Sprinkle graham cracker crumbs over bottom of 8-inch spring-form pan; carefully spoon cheesecake filling over crumbs. Chill until firm.
  10. Yields 16 servings, 100 calories per serving.
