Light Orange Cheesecake
- 2 envelopes unflavored gelatin
- 3 strips orange rind
- 1/8 tsp. salt
- 3 c. (24 oz.) low calorie creamed cottage cheese
- 1 1/2 c. orange juice, divided
- 3/4 c. sugar, divided
- 2 eggs, separated
- 1 tsp. vanilla
- 1/4 c. graham cracker crumbs
- Sprinkle gelatin over 1/2 cup orange juice in container of electric blender.
- Heat remaining 1 cup orange juice to boiling and add to blender.
- Cover and process at high speed until gelatin dissolves.
- Stop blender, add orange rind, 1/2 cup sugar, salt, egg yolks, cottage cheese and vanilla.
- Cover and process until smooth.
- Pour into a large bowl; chill until mixture mounds slightly when dropped from a spoon.
- Beat egg whites until soft peaks form, gradually beat in remaining 1/4 cup sugar and beat until stiff.
- Fold into orange mixture.
- Sprinkle graham cracker crumbs over bottom of 8-inch spring-form pan; carefully spoon cheesecake filling over crumbs. Chill until firm.
- Yields 16 servings, 100 calories per serving.
