Charlie'S Cheesecake

  1. Bring cream cheese to room temperature.
  2. Preheat oven to 350u0b0. Cream down cheese to eliminate lumps.
  3. Add vanilla and salt.
  4. Mix, scraping sides continuously.
  5. Add sugar and mix.
  6. Add egg yolks and mix.
  7. Add whole eggs and mix.
  8. Mixer should make small, soft peaks. If too stiff, add small amounts of egg yolk.
  9. In a 10 x 2-inch spring-form pan, layer bottom with cracker crumbs.
  10. Rub sides of pan with vegetable oil.
  11. Add batter, shake gently to eliminate bubbles.
  12. Bake until center is firm (45 to 55 minutes).
  13. Cool. Remove from pan.
  14. Freeze 24 hours before slicing or serving.
