Charlie'S Cheesecake
- 3 lb. cream cheese
- 1/2 tsp. pure vanilla
- 1/4 tsp. (heaping) salt
- 2 c. sugar
- 3 egg yolks
- 5 whole eggs
- 3/4 c. graham cracker crumbs
- Bring cream cheese to room temperature.
- Preheat oven to 350u0b0. Cream down cheese to eliminate lumps.
- Add vanilla and salt.
- Mix, scraping sides continuously.
- Add sugar and mix.
- Add egg yolks and mix.
- Add whole eggs and mix.
- Mixer should make small, soft peaks. If too stiff, add small amounts of egg yolk.
- In a 10 x 2-inch spring-form pan, layer bottom with cracker crumbs.
- Rub sides of pan with vegetable oil.
- Add batter, shake gently to eliminate bubbles.
- Bake until center is firm (45 to 55 minutes).
- Cool. Remove from pan.
- Freeze 24 hours before slicing or serving.
