Oatmeal Scotchies
- 1 1/4 c. all-purpose flour
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1/2 tsp. cinnamon
- 1 c. (2 sticks) butter, softened
- 3/4 c. sugar
- 3/4 c. firmly packed brown sugar
- 2 eggs
- 1 tsp. vanilla extract
- 3 c. quick or old-fashioned oats, uncooked
- 12 oz. pkg. (2 c.) Nestle Toll House butterscotch morsels
- Preheat oven to 375u0b0.
- In small bowl, combine flour, baking soda, salt and cinnamon; set aside.
- In large mixer bowl, beat butter, sugar, brown sugar, eggs and vanilla extract until creamy. Gradually beat in flour mixture.
- Stir in oats and butterscotch morsels.
- Drop by tablespoons onto ungreased cookie sheets.
- Bake 7 to 8 minutes for chewier cookies, 9 to 10 minutes for crispier cookies.
- Makes about 4 dozen.
