Potato and Peppercorn Spiced Salad

  1. Cook potatoes in boiling water until tender; drain and cool.
  2. Combine potatoes, kabana or salami and spring onions.
  3. Mix mayonnaise, peppercorns, lemon rind and one tablespoon of parsley.
  4. Pour mayonnaise mixture on salad and toss.
  5. Chill.
  6. Garnish with remaining parsley to serve.
  7. Delicious hot or cold.
