Veggie Lo Mein

  1. Cook spaghetti in large pot of boiling water as label directs.
  2. Just before draining add broccoli, edamame, carrots, and spinach.
  3. Drain well; set aside.
  4. In same pot, heat toasted sesame oil on medium-high.
  5. Add onion, thinly sliced; cook 5 minutes.
  6. Add grated peeled fresh ginger, soy sauce, and balsamic vinegar.
  7. Cook 1 minute.
  8. Add eggs, beaten; cook 2 minutes without stirring.
  9. Add noodle mixture; cook, tossing, 2 minutes or until heated through.
