Grilled Chicken Tacos
- 4 tablespoons olive oil
- 3 tablespoons fresh lime juice
- 2 teaspoons chili powder
- 1 teaspoon kosher salt
- 12 teaspoon ground pepper
- 12-1 chipotle chile, in adobo. Chopped very fine. (If you use a whole pepper it will be a little spicier)
- 1 teaspoon adobo sauce, from the chipotle peppers can
- 1 lb chicken, tenderloins. (You may substitute Chicken Breast As well)
- To make Marinade: In a small bowl whisk together the marinade ingredients.
- Rinse the chicken under cold water dry with paper towels.
- Put marinade and chicken in ziplock bag for at least 1 hour.
- Grill chicken over Medium High heat 6-10 minutes (for chicken tenderloins) until meat is fully cooked, turning once.
- Cut chicken into bite sized pieces.
- Put Meat in your favorite hard shelled or softshelled Taco.
- Top with fresh Guacamole, Cheese, and Lettuce.
- Accompany with a Dash of Cholula Hot Sauce.
