Mancha Manteles

  1. Brown turkey in lard.
  2. Remove.
  3. Pour off fat, leaving 2 tablespoon in the pan.
  4. Fry chiles, almonds, and sesame seeds together until fragrant.
  5. Blend to a puree in a blender.
  6. Fry chorizo meat in the fat that remains in the pan.
  7. Remove.
  8. In the same fat, cook onions until soft.
  9. Add blended mixture, tomatoes, and cinnamon.
  10. Cook a few minutes and then turn out the whole mess into a large casserole.
  11. Mix in the stock, sugar, vinegar, and salt.
  12. Taste for seasoning.
  13. Add browned turkey pieces, chorizo meat, and fruit.
  14. Cover and simmer 45 min to 1 hr.
