Lemon Bars
- 1 c. flour
- 1/4 c. confectioners sugar
- 1 stick cold sweet butter
- grated lemon
- 1 c. confectioners sugar
- 1/4 tsp. baking soda
- juice 1 lemon
- 1/4 tsp. vanilla or almond extract
- 1/4 tsp. each ground cinnamon and nutmeg
- toasted almond slices
- Preheat the oven to 350u0b0.
- Butter and flour an 8 x 8-inch baking pan.
- In large bowl, combine flour, sugar and butter to form a dough.
- Press the dough evenly into the prepared pan.
- Bake for 25 minutes.
- Allow this to cool; prepare remaining ingredients in large bowl.
- Whisk together remaining ingredients until well blended.
- Pour the mixture over cooled shell and bake 25 minutes. Allow to cool, then sprinkle with confectioners sugar and almonds. Cut into bars and serve.
