Spicy Chicken Casserole
- vegetable cooking spray
- 1 tsp. vegetable oil
- 2 chicken breasts, skinned, boned and cut into 1/2-inch strips
- 2 c. frozen whole kernel corn, thawed
- 1 medium onion, thinly sliced
- 1 medium green pepper, chopped
- 1 (8 oz.) can tomato sauce
- 1/2 c. chili sauce or salsa
- 3 tsp. minced fresh cilantro
- 2 tsp. chili powder
- 2 tsp. finely chopped jalapeno pepper
- 1 c. shredded reduced fat Monterey Jack cheese
- Coat a large nonstick skillet with cooking spray; add oil. Place over medium high heat until hot.
- Add chicken.
- Cook 5 minutes or until lightly brown.
- Combine chicken, corn, onion, green pepper, tomato sauce, salsa, cilantro, chili powder and jalapenos in a large bowl; stir well.
