Queso Fundido Italiano
- 1 small onion, thinly sliced
- 1/2 lb. (225 g) Italian sausage links, casings removed, cut into bite-size pieces
- 1/2 tsp. crushed red pepper
- 1 pkg. (6 oz/170 g) baby spinach leaves
- 2-1/2 cups Cracker Barrel Shredded Part Skim Mozzarella Cheese
- 1 French baguette (3/4 lb./340 g), cut into 18 slices
- Heat oven to 350 degrees F.
- Heat nonstick skillet on medium heat.
- Add onions; cook 8 to 10 min.
- or until tender and golden brown, stirring frequently.
- Remove from skillet; set aside.
- Add sausage to skillet; cook 5 min.
- or until browned, stirring occasionally.
- Stir in red pepper; cook 1 min.
- Add spinach.
- Cover; cook 2 min.
- Stir in cheese.
- Spoon into 9-inch pie plate; top with onions.
- Bake 10 min.
- Serve with bread.
