Summertime Meat Loaf
- 2 eggs
- 1 (8 oz.) can tomato sauce
- 3 Tbsp. Worcestershire sauce
- 1/2 tsp. salt
- 1 1/2 c. soft bread crumbs
- 1/4 c. nonfat dry milk
- 1 1/2 lb. ground beef
- 1/2 c. chopped onion
- 1 Tbsp. butter or margarine
- In large mixing bowl, lightly beat together eggs.
- Add 1 cup tomato sauce, 2 tablespoons Worcestershire sauce and salt.
- Mix. To mixture, add bread crumbs, milk, beef and onion.
- Mix lightly. Shape into 6 oval loaves.
- Cook in butter in large skillet over medium heat for 8 to 10 minutes.
- Combine remaining tomato sauce to 1 tablespoon Worcestershire sauce.
- Turn meat loaves and brush with sauce.
- Cook 5 minutes more or until done.
- Heat remaining sauce and spoon over meat.
- Yields 6 servings.
