Chicken Pot Pie
- 3 Tbsp. butter
- 3 Tbsp. flour
- 1/4 tsp. pepper
- 2 c. cooked and diced chicken
- 1/2 c. chicken broth
- 1/4 c. milk
- 4 oz. shredded American cheese
- 2 cubed potatoes
- 1 bunch broccoli flowerets or 1 (10 oz.) pkg. frozen mixed vegetables
- Preheat the oven and baking sheet to 425u0b0.
- Boil the potatoes until almost done. Add the broccoli flowerets the last 1 to 2 minutes of cooking time or add the mixed vegetables the last 2 minutes.
- In a large saucepan, combine butter, flour and pepper. Cook over medium-low heat until mixture is bubbly and thick. Gradually stir in broth and milk and stir until mixture begins to thicken. Add cheese and stir until melted. Fold in chicken and potatoes-broccoli mixture.
- Pour into pie crust. Moisten edges with water. Top with other crust. Crimp edges. Slit top.
- Bake 30 minutes.
