Potato-Crusted Tilapia

  1. Preheat oven to 450 degrees F. Grease wire rack and set it in jelly-roll pan.
  2. In bowl, stir tartar sauce, chives, and lemon peel; reserve 1/2 c. sauce for serving.
  3. Spread each of tilapia fillets with 2 tablespoons of the remaining sauce; top each with 3 tablespoons potato flakes.
  4. Place fish on rack; bake 8 to 10 minutes or until fish turns opaque and top is golden.
  5. Serve with reserved sauce.
