Gluten Free Dessert Bread W/ Coconut & Chocolate Chips

  1. Preheat Oven to 350.
  2. Grease 8.5 x 4.5 Loaf Pan.
  3. (I use a heavy Pyrex loaf pan for best results).
  4. Combine: Flours, Baking Powder, Xanathan Gum, Salt in a bowl, set aside.
  5. Cream Eggs, Brown Sugar & Crisco together, mix in vanilla & applesauce.
  6. Slowly add the combined flours & dry ingredients, mixing as you go.
  7. Add in coconut, mixing well.
  8. Stir in nuts and candies (or chocolate chips) by hand.
  9. Spread into prepared loaf pan.
  10. Bake 45 - 50 min, depending on your oven.
