Chillic N' Chili
- 1 tbsp olive oil
- 1 cup chopped onion
- 1 cup chopped green bell pepper
- 3/4 chopped carrots
- 3 tsp minced garlic
- 2 lb ground chicken
- 1 1/2 tbsp chili powder
- 1 1/2 tsp dried oregano
- 1 1/2 tsp dried basil
- 1 tbsp ground cumin
- 1/2 tsp salt
- 1 tsp red pepper flakes
- 14 1/2 oz diced tomatoes undrained
- 15 oz beans
- 32 oz chicken broth
- 6 oz tomatoe paste
- add oil to large soup pot.heat until oil is hot.Add the onion,bell pepper,carrots,and garlic.Cook until veggies are tender stir occassinally 6 to 8 mins.
- Add the chicken and break up the meat with a spoon cook until no longer pink about 12 minutes then pour off fat juices
- Stir in the chili powder,oregano,basil cumin,salt and red pepper flakes.
- cook about 3 mins.
- Stir in the tomatoes, beans(whatever brand you choose)broth,and tomatoe paste.
- Bring to a boil.
- Reduce the heat to low and cook UNCOVERED stirring occasioonally,until the flavors come together about 1 hour.
