Easy and Delicious Bean and Corn Salsa
- 2 cans Black Beans
- 2 cans Yellow Corn (Not Creamed)
- 4 whole Roma Tomatoes, Diced
- 3 whole Avocados, Diced
- 3 stalks Scallions, Chopped
- 3 Tablespoons Freshly Chopped Cilantro
- 1 package Good Seasons Italian Dressing Mix
- 1/4 cups Red Or White Wine Vinegar
- 3 Tablespoons Water
- 1/4 cups Vegetable Oil
- 1 whole Lime
- Drain and rinse cans of black beans and corn.
- Combine in a large mixing bowl with tomatoes, avocados, scallions, and cilantro.
- Mix the package of Italian dressing with vinegar water and oil (just follow ingredient directions on the back of the package) and then pour over ingredients in the bowl.
- Add the juice from the lime and mix.
- (The lime juice will also help the avocados from browning.)
