Vegan Tofurkey Club Wraps W/Ranch Dressing
- 1 cup vegan mayonnaise
- 14 cup soymilk
- 2 tablespoons green onions, sliced
- 1 tablespoon chives, chopped
- 2 teaspoons dried parsley
- 2 garlic cloves, crushed
- 1 pinch salt
- black pepper
- 8 whole wheat tortillas
- 8 lettuce leaves
- 14 lb baby spinach leaves
- 1 small cucumber, sliced
- 2 tomatoes, small and ripe, sliced
- 12 cup red onion, sliced
- 1 cup alfalfa sprout
- 16 Lightlife turkey slices (Tofurkey is preferred)
- 16 slices vegan bacon
- For the dressing, crush the garlic with the salt and mash together into a paste.
- Mix with the rest of the ingredients, adding the milk slowly to desired consistency.
- Chill for at least 30 minutes to let the flavors meld.
- Cook the facon and set on a paper towel to drain.
- Assemble the wraps in the order listed, one lettuce leaf, baby spinach, 4 cucumber slices, 2 tomato slices, onions, sprouts, 2 slices of Tofurkey and 2 pieces of facon.
- Top with the ranch dressing.
- Fold up, eat, enjoy.
