Banana-Chocolate Chip Bread
- 1 3/4 c. flour
- 2 1/4 tsp. baking powder
- pinch of salt
- 1 Tbsp. wheat germ
- 1/3 c. shortening (butter or margarine)
- 2/3 c. sugar
- 1/2 tsp. lemon or orange juice
- 1 to 2 eggs
- 2 or 3 ripe bananas, cut in pieces
- 1/2 c. chocolate chips
- Preheat oven to 350u0b0.
- Measure dry ingredients and chips.
- Mix together in a large bowl and set aside.
- Use food processor or blender to mix shortening, sugar, juice, eggs and bananas and process until smooth.
- Pour banana mixture into bowl with dry ingredients and stir just until dry ingredients are moistened. Pour batter into greased 8 x 4-inch loaf pan and bake for about 45 to 50 minutes or until golden brown.
- Cool on wire rack before slicing.
- Tastes great plain or with cream cheese.
- The perfect recipe for very ripe bananas!
