Fruit & Nut Energy Bars
- 3 12 cups oats (rolled oats or quick cooking oats)
- 12 cup dried cranberries
- 12 cup dried plum
- 12 cup dried apricot
- 12 cup mini chocolate chip
- 14 cup flax seed meal
- 12 teaspoon cinnamon
- 12 cup light brown sugar
- 1 tablespoon salted butter
- 14 cup honey
- 3 eggs
- 1 teaspoon vanilla
- 14 cup water

- Preheat oven to 350 degrees F.

- Combine oats, dried fruits, chocolate chips and flax seed meal in a bowl.

- In a microwaveable container melt butter, brown sugar and honey; once all are melted mix in cinnamon, vanilla, eggs (slightly beaten) and water.
- Mix well.

- Mix dry ingredients with wet ingredients.
- (mixer works best).
- 5.
- Press mixture firmly into a 9 x 13 baking pan that has been sprayed with cooking spray or brush with oil or butter.
- 6.
- Bake for 18-20 minutes until firm.
- 7.
- Cool before cutting into bars.
