Baked Ziti

  1. Preheat oven to 350F
  2. Butter a 9x13-inch baking dish.
  3. Bring a large pot of water to a boil.
  4. Cook the ziti and carrots together for about 6 minutes.
  5. Drain well.
  6. Pour into the baking dish along with the pepper, onion, zucchini, and 1 cup cheese.
  7. In a medium-size saucepan, melt the butter.
  8. Add the flour and whisk until you have a smooth paste.
  9. Slowly add the milk, whisking constantly.
  10. Turn the heat to low and cook for 12 to 15 minutes, whisking constantly.
  11. Season to taste with salt and pepper.
  12. Pour sauce over pasta and vegetables.
  13. Sprinkle remaining cheese on top.
  14. Bake for 30 minutes or until bubbly.
