Spicy Mu Shu Beef Roll-Ups
- 1 pound roast beef shaved
- 1 cup orange marmalade
- 1/2 cup salsa hot
- 1 teaspoon ginger root grated
- 8 x flour tortillas 9"
- 1/2 cup almonds unblanched, sliced
- 2 cups spinach fresh, shredded
- 1 cup mushrooms fresh, thinly sliced
- 1/2 cup scallions, spring or green onions thinly sliced
- 1 x scallions, spring or green onions brushes (optional)
- Divide beef into 8 equal portions; cover and set aside.
- Combine marmalade, salsa and gingerroot in small saucepan.
- Cook and stir over low heat until warm.
- Soften tortillas according to package directions.
- Spread about 1 tbsp marmalade mixture on 1 side of each tortilla and sprinkle with almonds.
- Top with beef, spinach, mushrooms and green onions, dividing evenly among tortillas;roll up.
- Arrange roll-ups in 15 1/2 x 15 1/2 x 1 inch jelly roll pan;cover tightly with aluminum foil.
- Bake at 350F (180C) F, 15 minutes or until heated through.
- To serve, arrange 2 roll-ups on each plate;garnish with green onion brush.
