Spicy Mu Shu Beef Roll-Ups

  1. Divide beef into 8 equal portions; cover and set aside.
  2. Combine marmalade, salsa and gingerroot in small saucepan.
  3. Cook and stir over low heat until warm.
  4. Soften tortillas according to package directions.
  5. Spread about 1 tbsp marmalade mixture on 1 side of each tortilla and sprinkle with almonds.
  6. Top with beef, spinach, mushrooms and green onions, dividing evenly among tortillas;roll up.
  7. Arrange roll-ups in 15 1/2 x 15 1/2 x 1 inch jelly roll pan;cover tightly with aluminum foil.
  8. Bake at 350F (180C) F, 15 minutes or until heated through.
  9. To serve, arrange 2 roll-ups on each plate;garnish with green onion brush.
