Almond Joy Cake
- 1 box dark chocolate cake mix
- 1 c. evaporated milk
- 1 c. sugar
- 24 large marshmallows
- 14 oz. coconut
- 1/2 c. margarine
- 1/2 c. sugar
- 1/2 c. evaporated milk
- 1/2 oz. semi-sweet chocolate bits
- slivered or sliced almonds
- Prepare cake mix according to box recipe.
- Bake in 16 x 10 x 2-inch pan.
- While cake is baking, mix 1 cup evaporated milk and 1 cup sugar; bring to rapid boil and then remove from heat.
- Stir in marshmallows; stir until melted.
- Add coconut and almonds and mix well.
- Spread mixture over hot cake.
- In saucepan add 1/2 cup margarine, 1/2 cup sugar and 1/2 cup evaporated milk.
- Bring to a rapid boil; remove from heat.
- Stir in chocolate bits; stir until melted.
- Spread over coconut layer.
