Mince Pie
- 2 Tbsp. butter
- 4 medium green tomatoes, cut into bite-sized pieces
- 4 small green apples, cut into bite-sized pieces
- 1/2 c. brown sugar
- 1/4 c. molasses
- 1/8 tsp. allspice
- 1/4 tsp. cinnamon
- 1/4 tsp. freshly grated nutmeg
- 1/4 tsp. freshly grated ginger
- 1 c. raisins
- 1 c. pecan pieces
- 1 tsp. vanilla
- 1 tsp. freshly grated lemon peel
- uncooked pie crust (for 2-crust pie)
- Saute tomatoes and apples in butter in a large, heavy skillet or frying pan for five minutes over medium heat.
- Add sugar, molasses and spices.
- Stir well while simmering for five minutes. Add raisins, pecans, vanilla and lemon peel.
- Simmer, uncovered, until most of the liquid has evaporated.
