Ben's Better Beer Batter Bread Recipe
- 2 c. unbleached all purpose flour
- 1 c. whole wheat flour
- 1 c. oat flour
- 1 to 3 Tbsp. sweetener* (to taste)
- 2 Tbsp. baking pwdr
- 1 tsp. xanthan gum (optional)
- 1 16 oz can of quality (room temperature) beer
- Thoroughly mix dry ingredients in a large bowl.
- Make a hollow in the center and add in beer.
- Stir only till dry ingredients are moistened.
- Batter should be lumpy.
- Pour into a 9 x 5 loaf pan and bake at 375
