Easy Weeknight Skillet Rice and Sausage

  1. Heat rice according to package directions, set aside.
  2. Cut sausage into 1/2/ inch thick slises.
  3. Cook in a large nonstick skillet over medium high heat 4 minutes on each side, or until browned.
  4. Drain on paper towels.
  5. Wipe skillet clean, and return the sausage to the skillet.
  6. Stir in rice, diced tomatoes, parsley, and 1/4 cup of water.
  7. Cook for 3 minutes, or untill thoroughly heated.
